The house sees itself as an institution: „Seit mittlerweile 50 Jahren ist Erno's Bistro eine feste Institution für Freunde gehobener Gastronomie und französischer Lebensart", for fifty years a fixture for lovers of fine dining and the French way of life. It rests on cuisine, wine and constancy, evidenced by a Michelin star held without interruption since 1998. Two people carry the story, both through their craft: head chef Valéry Mathis and patron Eric Huber, who chooses the wine for his dishes „persönlich", personally. Towards its guests the house speaks as if to regulars, addressing them as „Liebe Gäste und Freunde von Erno's Bistro".
