The house sees itself as an institution and a benchmark, carried by the Pappas family, in the restaurant business since 1967, and by one key term: „immeasurable care", explicitly directed at guests, at every detail and at its own team. It rests on verifiable craft in the product, „tight quality control from field to flame", and on sommeliers who advise the connoisseur and the novice alike, without distinction of rank. That its own team is named alongside the guest as an object of care is notable. What it promises is reliability for evenings that have to succeed, „when the event must go flawlessly".
