Nobu Malibu builds on location and brand: “the world’s most beautiful waterfront restaurant” right above the Pacific, part of Nobuyuki Matsuhisa’s global Nobu empire, with Japanese-Peruvian cuisine, omakase and visible proximity to Hollywood (“the ultimate celebrity hotspot”). The place is the protagonist, the cuisine the ritual (“start with 2 or 3 cold dishes …”). Hosts or encounter play no role in the self-portrayal; the energy is meant to come from sea, light and scene.
