Paco Meralgo

The house calls itself an „Alta Taberna", meaning high quality in the form of a tavern rather than a restaurant, at a bar it calls „la barra más canalla de la ciudad", the cheekiest bar in town. It rests on the product, which it justifies almost morally, „Calidad sin paliativos, sin atajos, nuestra razón de ser y de existir", and places people explicitly above it: „El producto lo pone la casa, el alma nuestro personal", the house provides the product, the staff the soul. It uses history not as prestige but as a legend of hospitality around an innkeeper named Paco, and welcomes guests with „Algunos dicen conocer al Sr. Meralgo… ¡Bienvenidos!".
